WildSpring Granola

4 C rolled oats (not steel-cut)
1 C shaved coconut, unsweetened
1 1/2 C sliced almonds with skins on edges, raw
1/2 C cashews, raw
3/4 C sunflower seeds, raw

Mix well.

1/2 C canola oil
1/2 C maple syrup
1/3 C dark brown sugar
1/2 t cinnamon
1/4 t nutmeg
1/4 t salt

Add to dry ingredients, toss and mix WELL. Put in a shallow pan that's been Pam'd. Bake 350 for 20 min or more, tossing every 10 min. (until everything is golden...takes longer than 20 min).

After cools, add 1 C raisins and 1 C chopped cranberries.
