5 slices large Francisco XSourdough Bread, slightly toasted, cut into 1 ½” squares
9 eggs, 1 C milk, 1/4 C hvy cream, 2 T melted butter, shakes of hot sauce, ¼ t salt & pinch pepper
1 large onion, chopped
½ each red, yellow and orange pepper, med chop, julienned carrot
2 C shredded cheddar/jack cheese
1/3 C real crumbled bacon or 1 C ham or 2 chicken/apple sausages, cut in half lengthwise and then thin slices
Sauté onion, peppers and sausage (all at once) in 2T butter until very well caramelized.
Beat egg/milk/butter/seasonings, add 1/2 of bread squares, gently press into mixture to make sure all are coated. Do not mix or they will fall apart.
Well Pam'd 9 - 10" deep pie pan or cassarole dish. Put layer of soaked bread (gently, it will be very fragile), vegetable/meat mix, then 2/3 of the cheese. Gently place the rest of the bread into the egg mixture, coat, then place on top of layers in dish, covering all of it. Sprinkle remaining cheese, then drizzle last egg mixture over top, trying to moisten all of it.
Cover loosely with silver foil, 375 oven (do not put on cookie sheet) for 30 min. Take foil off, turn oven down to 350 and bake for 25 min more until golden brown and puffy.
Breakfast Sausage Strata
5 slices SD bread, slightly toasted, torn into large bite-size pieces
1 lb. bulk sausage, cooked, drained, sauteed with 1 onion and 1 red pepper, chopped fine
1+ cup sharp Cheddar Cheese
8 eggs beaten with 2 C milk (2/3 milk 1/3 hvy cream), seasoned pepper, a couple of shakes hot sauce
Layer bread, sausage, cheese, egg mixture in a 9 x 13 pan. 350 oven for 70 min. You might need to lay a piece of silver foil over it after 45 min to prevent over-browning.
