5 slices large Francisco XSourdough Bread, toasted, cut into 1 ½” squares
9 eggs, 1 C milk, 2 T melted butter, shakes of hot sauce, ¼ t salt & pinch pepper
1 med onion, chopped
½ each red, yellow and orange pepper, med chop, julienned carrot
2 C shredded cheddar/jack cheese
1/3 C real crumbled bacon or 1 C ham or chicken/apple sausage
Beat egg/milk/butter/seasonings, add 1/2 of bread squares, gently press into mixture to make sure all are coated. Do not mix or they will fall apart.
Sauté onion, peppers and carrots (all at once) in 2T butter until very well caramelized.
Well Pam casserole dish. Put layer of soaked bread (gently, it will be very fragile), vegetable mix, then bacon, then 2/3 of the cheese. Gently place the rest of the bread into the egg mixture, coat, then place on top of layers in dish, covering all of it. Sprinkle remaining cheese, then drizzle last egg mixture over top, trying to moisten all of it.
Cover loosely with silver foil, 375 oven (do not put on cookie sheet) for 30 min. Take foil off, turn oven down to 350 and bake for 25 min more until golden brown and puffy.
