(For about 6 people:)
2 cans apricot halves in lite syrup, drained well, save 1/4 C
1/3 C dark brown sugar
1/4 C apricot syrup
1/2 stick salted butter, melted
Cinnamon
About 3/4 “stick” of Ritz, crushed
Coat inside of casserole with butter or coconut oil. Layer 1/2 apricots, sugar, cinnamon (lightly), Ritz. Repeat. Pour butter over top, pour apricot juice over top last.
Bake 325 for 45 min (until top is golden and crusty).
(For 8 - 10 people)
